It’s Halloween! So I decided to make these adorable cookies to celebrate the holiday! 🥳
No they're not simple to make, but they are pretty tasty and would be a big hit at a Halloween party!
Ingredients:
2 tbsp ground flaxseeds
4 tbsp warm water
1 c vegan butter, softened
2 c granulated sugar
1/2 c brown sugar, packed
1 tbsp vanilla extract
3 3/4 c flour
2 tsp baking powder
1/8 tsp salt
1/4 c coco powder
Directions:
In a small bowl, whisk together the ground flaxseeds and warm water, and set aside to gel up
In a stand mixer or mixing bowl, cream the vegan butter, granulated sugar, and brown sugar together
Once it’s a smooth texture, add in the flaxseed eggs and mix until well combined
Add in the vanilla and mix until well combined
Stop the mixer, and add the flour, baking powder, and salt
Mix until the dough is just combined (it might look a little dry, but if the dough sticks together when you press it, it’s a good consistency)
Divide the dough in half, keeping one half in the mixing bowl
Add 1/4 c coco powder to the dough in the mixing bowl and mix until well combined
Optional: add some food coloring to the vanilla cookie to make it more halloween festive
Half the vanilla and chocolate doughs, place it on wax paper, and roll it out into a 1/4 inch thick rectangle
Repeat step 10 with the rest of the dough
Chill the dough for 30 minutes
Take the doughs out, let them sit for a few minutes, then stack one chocolate rectangle on top of one of the vanilla rectangles
Using the wax paper, roll the doughs long wise (like if you were folding the rectangle hot dog style) until you reach the end
Use the wax paper to cover the log of dough and chill it for 2 hours or freeze it for 1 hour
Lightly grease your baking sheets and heat your oven to 350 degrees F
Once your dough is thoroughly chilled, slice your log into 1/4 inch thick and lay them down on the baking sheet
Optional: pour some halloween sprinkles on a plate and roll the edges of the cookies until they’re coated
Bake for 10 - 12 minutes or until you can smell the cookies (they might still feel a little soft, but pull them out anyways because they’ll harden a little more as they cool
Let them cool for about 5 minutes and then transfer into an airtight container
