Love Pancakes but hate having to sit there and cook them? Well, now you don’t have to! With the new One Pan Pancakes!
I saw Edgy Veg do a video with a recipe for pancakes, but you just put them in a tray, bake them, and wa-la! You have pancakes for the week! So, of course I had to try them. The best part about this recipe? You can make whatever kind of pancakes you want! I made Birthday Cake Pancakes, and they were delicious!
Ingredients:
2 c flour
2 tsp baking powder
1/2 tsp salt
1 tbsp sugar
2 tbsp ground flaxseeds
5 tbsp warm water
1 1/2 c plant based milk
2 tbsp vegan butter (I used Earth Balance, but you can use whatever kind you want)
Directions:
In a medium bowl, add the 2 tablespoons of ground flaxseeds with 5 tablespoons of warm water
Whisk them together and set aside for 5 - 10 minutes or until the mixture is thick and gelatinous
Melt the 2 tablespoons of vegan butter and set aside to let it cool down to room temperature
In a medium to large mixing bowl, add the flour, baking powder, salt, and sugar and whisk to combine
Add the room temperature milk to the flaxseed mixture and whisk together
Whisk the cooled butter in with the flaxseeds and milk until well combined
Add the wet ingredients to the dry ingredients and fold until the ingredients are well mixed
If you want to add extracts and or other toppings, like sprinkles, seeds, fruit, chocolate chips, etc, mix them into the dough
Place the batter in the fridge for about 30 minutes
Heat the oven to 425 degrees F
Spray a 9 x 13 inch pan with cooking spray
Pour the batter into the pan and distribute the batter evenly
Bake for 10 - 12 minutes or until the sides are golden brown and a toothpick inserted comes out clean
Let it cool for a few minutes, cut, and enjoy!
Add Ins for Pancakes:
It goes without saying, but I’ll say it just in case, add whatever you want, and however much you want to make your own delicious flavor combos!
Sprinkles
Chocolate Chips of any flavor
Fruit frozen or fresh (if they’re frozen be sure to get the extra liquid out first)
Nuts: walnuts, cashews, almonds, pistachios, etc
Seeds: sunflower, hemp, chia, flax, poppy, etc
Extracts: vanilla, peppermint, almond, lavender, etc
Spices: cinnamon, nutmeg, pumpkin, gingerbread, etc
