My Grandma Olson's Chocolate Chip Cookies
During this crazy time, Disney decided to release some of their famous snack recipes and one of them was Jack Jack’s Chocolate Chip Cookie. I was curious what made it so special, so I looked at the recipe. For the most part, it’s a pretty basic chocolate chip cookie recipe. But people seem to LOVE the cookie. So I thought I would give it a try and see how good it really is. And why not compare it to one of my favorite chocolate chip cookie recipes by my Great Grandma? (Okay, I'm pretty sure that it's Nestle's chocolate chip recipe... but I didn't know that until recently. Oo[s. 😂)
Also, I realized after I baked the cookies that I forgot to add an “egg yolk” which is probably why the dough was so dry at first.
In the end I will say that browning the butter gives the cookie a richer buttery flavor.
The cookies are delicious, but if I make them again I’m going to use different vegan butter and less salt.

Recipes:
Disney’s Jack Jack Cookies (Vegan):
2 sticks vegan butter
1 1/4 c brown sugar
1/2 c granulated sugar
1 flaxseed egg (1 tbsp ground flaxseed with 3 tbsp water)
1 egg yolk flaxseed egg or Bob’s Red Mill Egg Replacer (1 1/2 tsp flaxseeds or egg replacer with 1 tbsp water)
1 tsp salt
1 tsp vanilla
1 tsp baking soda
2 1/4 c flour
1 c chocolate chips
Preheat the oven to 350 F
To brown the butter, place the butter in a saucepan over medium heat, and stir occasionally, letting the butter turn to an amber brown color
Pull off the the stove and let cool down until it starts to become solid again
Cream the butter and sugars until well combined and smooth
Add the egg, yolk, and vanilla and mix until well combined
Add the dry ingredients and mix until just combined
Add the chocolate chips and mix by hand
Scoop and chill in the fridge for at least and hour, or put them into the freezer for 15 minutes
Bake for about 10 minutes or until the edges are slightly golden brown
Grandma Olson’s Chocolate Chip Cookies:
2 tbsp ground flaxseeds
4 tbsp warm water
1 c vegan butter
1 c brown sugar
1/2 c granulated sugar
1 tsp vanilla
2 1/2 c flour
1 tsp baking soda
1/2 tsp baking powder
1 package chocolate chips
Preheat the oven to 350 F
In a small bowl, whisk the water and ground flaxseeds together and set aside to gel up
Beat the butter and sugars together until light and fluffy
Add the eggs and vanilla in and mix well
Add the dry ingredients and mix until just combined
Add in the chocolate chips and mix by hand
Place in fridge for an hour or more or place in freezer for 15 minutes (optional)
Scoop out onto uncreased baking pans and bake for about 10 - 12 minutes minutes or until slightly golden brown on the edges
Keep in an airtight container for up to a few weeks, or in the freezer for a few months (if they last that long 😜)
